What’s the difference between a storage fridge and a refrigerated prep counter?
Storage fridges are for general chilled holding of stock, usually with plain shelving, while refrigerated prep counters add a GN pan gantry above a worktop specifically for active ingredient prep during service.
Do all commercial storage fridges use the same refrigerant?
Most modern commercial fridges use R290 (propane) or R600a for improved energy efficiency and lower environmental impact, though some older or larger units still use R134a — check the spec sheet for the exact refrigerant type.
