Why this blast chiller earns its place
The BFT52 is the largest of Foster's tray-loading blast chiller/freezer range covered here, an undermount cabinet built for kitchens producing serious volume. Where the smaller BFT15 and BCT22-12 handle single-section prep, the BFT52 is sized for a full 14 x GN 1/1 tray load — this is a cabinet for a central production kitchen or a busy contract catering operation, not a single restaurant pass. It keeps the same undermount principle as the rest of the range: cooling air is drawn from floor level, which suits low ceilings and hot ambient kitchens where a top-vented cabinet would struggle.
Performance scales with the size. A full 52kg batch chills from +70°C to +3°C in under 90 minutes, and the same 52kg load can be frozen from +70°C to -18°C in under four hours — genuine full-capacity chill and freeze in one cabinet, not a compromise between the two. A temperature probe drives the cycle for controlled, monitored results, and the BFT colour-coded touchpad keeps the same press-and-go interface as the smaller models so operators don't need retraining to step up in capacity. The working range spans -18°C to +70°C. Power draw is 2565W, but note this cabinet runs on 400V rather than the single-phase 230V of the smaller Foster blast units — a three-phase supply is needed.
Construction is 304 stainless steel, interior and exterior, with a right-hand hinged solid door and a gross weight of 158kg. It sits on 4 x 80mm lockable castors for positioning, and Foster backs it with a 2-year on-site parts and labour warranty. It uses R404a refrigerant.
