Why this blast chillers & blast freezer earns its place
A blast chiller taking five 1/1 gastronorm trays, the 7489.5205 is built to bring hot food from +90°C down fast once it comes off the stove — a job a storage fridge is not designed to do. It lets a kitchen cook in batches, chill the output quickly and hold it for later service, which is the backbone of a cook-chill operation. With 14 kW of refrigeration power and R452A refrigerant pushing cold through 60 mm insulation, it pulls heat from food far faster than a standard fridge can manage.
On a prep day, trays of cooked food go straight from the range into the chiller and come out cold and ready to store, rather than sitting out to cool at room temperature. Blast chilling food through the danger zone quickly is what keeps cook-ahead food safe, and the 1/1 GN trays mean the chiller drops into the same pan system the rest of the kitchen already uses. The internal working space is 680 mm wide and 405 mm deep, giving a generous tray footprint on each of the five shelves.
The unit is 800 mm wide by 750 mm deep, standing 890 mm tall — smaller than the larger seven-tray model — and needs a 230V single-phase supply and ventilation clearance above to shed the heat it pulls from the food. Weighing 132 kg, it is built to last and ready for a busy kitchen. Craven Cooling can advise on siting, electrical supply and servicing.
