The Combisteel 7489.5217 is a commercial blast chiller that rapidly pulls freshly cooked food through the danger zone to safe chilled storage, so kitchens can batch-cook, cool down quickly and hold stock to HACCP without cooking everything to order.

The working view
A blast chiller is back-of-house kit built for cook-and-chill. It drops the core temperature of freshly cooked food far faster than a standard fridge, so you can batch-cook, cool safely and store for later service rather than cooking on demand.
In daily use it works in cycles: load hot trays, run the chill, then move stock to storage. Rapid cool-down limits the time food spends in the bacterial danger zone, which protects both your safety records and the moisture and texture of the dish.
It sits in the prep area as a dedicated unit, so plan the route in and a level, ventilated spot with clearance for airflow and door swing. Check the rating plate against your available electrical supply before install.
Right for
- Restaurants & gastro pubs — cook ahead in quiet periods and chill down for service without losing quality.
- Contract caterers & event kitchens — batch-produce, chill and hold large volumes to a fixed HACCP standard.
- Schools & hospitals — meet cook-chill compliance for high-volume, scheduled meal service.
- Food producers — bring cooked product to safe storage temperature quickly to protect shelf life.

Questions, answered straight
It rapidly lowers the core temperature of freshly cooked food so you can cool it through the danger zone quickly and store it for later service. That lets a kitchen cook ahead in batches instead of cooking everything to order.
A standard fridge holds already-cold food and isn’t built to pull hot food down quickly. A blast chiller is designed for that rapid pull-down, which protects food safety and the texture of the dish.
Yes. Rapid, controlled cooling is the backbone of a cook-chill HACCP plan, giving you a repeatable process for cooling cooked food safely before storage. Log each cycle as part of your food-safety records.
Site it in the prep area as a dedicated unit with a level floor, ventilation clearance for airflow, and room for the door to swing. Check the rating plate against your electrical supply before install.
It’s built around standard gastronorm trays, so cooked food moves straight from oven pans into the chiller and out to storage without decanting.
