Why this blast chiller earns its place
The BCT22-12 is Foster's mid-capacity tray-loading blast chiller, an undermount cabinet built primarily as a chiller with an occasional-use freeze function bolted on for kitchens that need both in one footprint. Like the rest of the range it sits low and draws its cooling air from floor level, which makes it a practical fit under a low ceiling or in a kitchen running hot ambient temperatures where a top-vented cabinet would lose performance. The BCT touchpad uses the same press-and-go, colour-coded interface as the smaller Foster models, so staff can start the correct cycle without training.
Capacity is 6 x GN 1/1 gastronorm trays (pans not supplied). Its primary job is chilling: a 22kg batch drops from +70°C to +3°C in under 90 minutes, the standard cook-chill benchmark. It's also rated to freeze 12kg from +70°C to -18°C in under four hours, though Foster designs this in as an occasional-freeze function rather than the cabinet's main role — this is a chiller that can freeze when you need it to, not the other way round. A temperature probe drives both cycles for a controlled, monitored drop rather than a fixed timer, and the working range across the cabinet spans +3°C to +70°C. It runs on R404a refrigerant, drawing 1601W at 230V.
Build is 304 stainless steel throughout, interior and exterior, with a right-hand hinged solid door and a gross weight of 128kg. It sits on 4 x 80mm lockable castors for positioning rather than a fixed plumbed-in installation, and Foster covers it with a 2-year on-site parts and labour warranty.
