Why this blast chiller earns its place
The Foster BCT52-26 17-453 GJ184 is the largest cabinet in Foster's tray-loading blast chiller/freezer range, built to move prepared food quickly through the temperature danger zone before it goes into storage or service. It takes up to 14 shelves on a full 1/1 gastronorm footprint and is rated to blast-chill 52kg or blast-freeze 26kg in a cycle, so it suits kitchens running genuine batch volume rather than the occasional tray.
The cabinet is stainless steel throughout with 65mm of insulation and an R404a refrigeration circuit. It stands around 1790mm tall on a compact 755mm-wide footprint and, at 166kg, is a fixed freestanding install rather than something that gets moved around. Unlike the smaller units in the range it runs on a 400V supply, so the electrical connection is one of the first things to confirm for the site.
A blast chiller only earns its place when the cycle matches the food safety requirement, so plan the batch pattern — how much comes off cooking at once, and how often — around the 52kg chill / 26kg freeze rating rather than the shelf count alone. Craven Cooling can confirm the current supplier specification, the 400V supply requirement and the installation route before you commit. The cabinet carries a 2-year on-site parts and labour warranty.
