Why this blast chiller earns its place
The Foster CB950 is a combined blast chiller and blast freezer cabinet for back-of-house cook-chill and cook-freeze work. It rapidly pulls cooked food from +70°C down through the danger zone to +3°C (or further to freeze), dropping core temperature far faster than a standard fridge or freezer can. The cabinet takes a 38 kg chill load or smaller freeze loads, so you can run full batch cycles.
In a production kitchen a blast cabinet is the compliance backbone: cook, blast, then hold. Rapid chilling protects texture and yield while keeping you on the right side of HACCP records, and a blast freeze cycle locks food down for longer-term frozen storage. The cabinet holds 10 shelves and accepts GN 1/1 pans, so entire batch pans chill or freeze as one unit.
It is a floor-standing cabinet built for a working kitchen and weighs 155 kg. The stainless-steel construction handles the thermal shock of constant hot-to-cold cycling. Check the footprint (1.5m tall × 75cm wide × 69cm deep) and door swing against your production area before installing, and plan clearance around the unit for air circulation.
