Why this blast chiller earns its place
The Foster BCT15-7 17-273 GJ180 is the compact cabinet in Foster's tray-loading blast range, built for kitchens that need a dedicated controlled chilling/freezing step but do not have the floor space or throughput for a full-height unit. It takes up to 5 shelves on a 1/1 gastronorm footprint and is rated to blast-chill 15kg or blast-freeze 7kg per cycle, bringing food down through the temperature danger zone faster than a standard fridge or freezer can.
At around 890mm tall on a 755mm-wide, 690mm-deep footprint it sits at worktop or under-counter height, and at 108kg it is a solid but manageable install. It runs on a standard 230V supply and — unlike the R404a units higher up the range — uses R290, a natural hydrocarbon refrigerant with a GWP of just 3, making it the lower-impact choice for operators watching refrigerant emissions. The cabinet is stainless steel with 65mm of insulation.
The important point in operation is whether the cabinet matches the actual batch pattern: how much food moves through it in a cycle against the 15kg chill / 7kg freeze rating, how often it runs, and how that fits the rest of the kitchen's production schedule. Craven Cooling can review the live supplier specification with you and confirm what still needs checking for the site, including where the cabinet sits relative to cooking and storage. It carries a 2-year on-site parts and labour warranty.
