Why this meat fridge earns its place
The Polar U-Series UA038 meat ageing cabinet is built for kitchens and butchery operations that want to dry-age their own meat rather than buy it in. At 400 litres capacity, it gives butchers, steakhouses and hotel kitchens the room to run bone-in primals and larger joints through a proper ageing cycle on site, with the reversible tempered glass door doubling as a front-of-house display so customers can watch the process rather than just be told about it.
Inside, fan-assisted cooling holds a tight +1 to +4°C band, tuned specifically for controlled dry-ageing rather than general chilled storage, and the digital controller manages both temperature and humidity with an alarm to flag any drift before stock is put at risk. Three shelves plus four hooks and a hanger give flexible loading, and the hanging rail is rated to 30kg — enough for full bone-in joints, not just smaller cuts. Running on R600a refrigerant, the cabinet draws just 160W.
Hygiene is built in rather than bolted on: UVC sterilisation and an activated carbon filter keep the cabinet odour-free and reduce the surface-contamination risk that comes with weeks-long ageing cycles, while the lockable door protects what is, cut for cut, some of the most valuable stock in the kitchen. Energy-saving control pauses the fan whenever the door opens, and defrost is manual rather than automatic — a deliberate trade-off that avoids disturbing the ageing environment with unnecessary heat cycles. The cabinet is backed by a 2-year parts and labour warranty and weighs 102kg gross.
