Why this blast chiller earns its place
The RBC20-60 is a roll-in blast chiller purpose-built around the Rational 201 trolley system, so a full trolley can go straight from a Rational 201-type combi oven into the chiller without decanting onto trays. It's the integral version, meaning the refrigeration system is built into the cabinet rather than remote-mounted — plug it in and it's ready to work, no pipework to a separate condensing unit required. Operation runs through Foster's Surf Navigation System: a single dial to turn and select the programme, then push to start, with programmes covering everything from delicate patisserie to large joints and stews.
The headline number is 60kg chilled from +90°C to +3°C in under 90 minutes — a genuinely high starting temperature, reflecting food straight out of combi cooking rather than pre-cooled stock. Programmes run either probe-controlled or timed, giving flexibility between a monitored core-temperature drop and a fixed cycle length. Foster's Circulair system manages airflow for uniform chilling across the trolley, with Automatic Surface Protection built in to guard against frost burn and wind chill damage on the outer layers of the load. The working range spans +3°C to +90°C, refrigerant is R452a, and the cabinet draws 1596W on a 400V/50Hz/3-phase/3.4A supply.
Construction is robust 304 stainless steel, on four 150mm legs, with a coated coil to resist corrosion and prolong the refrigeration system's working life. The door has a heavy-duty easy-grip handle and a long-life silicon gasket rated to cope with the high in-going temperatures a trolley straight from the oven brings with it. Gross weight is 281kg. Foster backs the RBC20-60 with a 2-year on-site parts and labour warranty.
