Why this blast chiller earns its place
The RBC20-60 remote is the same roll-in blast chiller as Foster's integral RBC20-60, built around Rational 201 trolleys so a full load can roll straight out of a type 201 Rational combi oven and into the chiller without decanting onto trays. The difference is in how it's refrigerated: this is the remote cabinet, meaning the condensing unit is a separate piece of plant connected by pipework rather than built into the cabinet itself. That makes it the right choice where the compressor needs to sit outside the kitchen, away from heat and noise, but it does mean pipework installation and a remote condensing unit have to be budgeted for separately — neither is included. Operation is identical to the integral version: Foster's Surf Navigation dial lets you turn to select a programme and push to start, with dedicated programmes for everything from patisserie to large joints.
The core performance figure carries over too: 60kg chilled from +90°C to +3°C in under 90 minutes, run either probe-controlled or timed depending on the product. Foster's Circulair airflow system delivers uniform chilling across the trolley, with Automatic Surface Protection guarding against frost burn and wind chill on the outer surfaces of the load. The working range is +3°C to +90°C, refrigerant is R452a, and the cabinet itself draws 1596W on a 400V/50Hz/3-phase supply.
Build is 304 stainless steel on four 150mm legs, with a coated coil to resist corrosion and a heavy-duty easy-grip door handle. The door gasket is long-life silicon, specified to cope with the high in-going temperatures that come with loading straight from the oven. Gross weight of the cabinet is 281kg. Because the compressor is remote, Foster covers this configuration with a 1-year on-site parts and labour warranty, a shorter term than the integral cabinet reflects.
