The Foster CB951 is a combined blast chiller and freezer cabinet that rapidly pulls cooked food from +70°C down to +3°C (and beyond into freeze). It takes hot food straight off the stove and drives the temperature down fast, so a kitchen can cook in batches and hold product safely rather than cooking every cover to order.
Blast chillers are built to take cooked food through the danger zone within a food-safety window, and a blast freezer cycles further to freeze product quickly. Rapid chilling forms smaller ice crystals, so texture and moisture hold up better than slow freezing in a standard freezer. The cabinet holds a 38 kg load across its 10 shelves and accepts full-size GN 1/1 pans, so you can chill or freeze entire batch runs.
It is a floor-standing cabinet-format unit that suits a prep area near the stove. It weighs 155 kg, so plan a clear delivery route and check floor loading.
