Why this blast chillers & blast freezer earns its place
The 7489.5210 is a commercial blast chiller built around standard 1/1 GN pans. Its job is to take freshly cooked food coming straight from the range at up to +90°C and drop it quickly through the food-safety danger zone down to +3°C, so a kitchen can cook ahead, chill fast and store or regenerate later without compromising safety or quality.
The recognised cook-chill approach is to bring hot food through the danger zone as fast as possible — a duty a blast chiller is engineered for and a standard fridge simply cannot do, because it is not built to shed that heat load. Actual cycle times depend on food type, load and thickness, but the chiller is rated to work across a +25 to +90°C operating range. At 15 kW of refrigeration power, it pulls that heat out in minutes rather than hours, with R290 refrigerant and 60 mm insulation built to handle the load.
The unit takes a floor footprint of 800 mm wide by 750 mm deep and 1,210 mm tall — roughly the size of a wide fridge — and needs a single-phase 230V supply and clear air space above and around for ventilation. At 173 kg, it is heavy enough to need planning space, but standard freestanding placement works in most kitchens. Craven Cooling can advise on siting and servicing. The noise level runs to 65 dB(A) in normal operation, which is typical for this duty.
