Why this blast chillers & blast freezer earns its place
The Combisteel 7950.5245 is a commercial blast chiller — the foundation of a cook-chill or batch operation. Where a storage fridge only holds food that is already cold, a blast chiller actively drives hot cooked food down through the danger zone quickly, which is what keeps prepared food safe. This unit takes fourteen 1/1 gastronorm trays per cycle, built to chill from +80°C down to +3°C using R290 refrigerant in a ventilated cycle with automatic defrost.
In daily use it reduces loaded trays fast, locking in texture and moisture as well as safety, then holds the chilled load ready for storage or service. That lets the kitchen cook ahead and run service from prepared batches rather than cooking to order. It is rated at 12 kW on a 230V single-phase supply and draws considerably more power than a storage fridge, so it needs an appropriate circuit and clearance.
It is a floor-standing stainless steel Aisi 304 unit, 800×800 mm footprint and 1763 mm tall, with 65 mm insulation for efficiency. Confirm the doorway access, electrical supply and siting clearances on the spec panel before installation; the unit weighs 180 kg loaded.
