Ninety minutes from +90°C to +3°C means you can safely chill meals hot from the oven without the water-bath wait, or freeze a full production run into solid blocks ready for next week's mise.
It's a dual-function unit. Switch it to chill, and you've got rapid chilling for soft bases and finished dishes. Switch it to freeze, and you're at -18°C in four hours — solid enough for long-term stock control. Five 1/1 GN trays fit cleanly, or swap them for five bakery trays if that's your shape. The stainless construction survives the wash-down, the castors mean you can roll it to wherever the prep is happening, and the internal food probe ensures the temperature curve actually flatlines where it needs to.
