The stainless steel interior and exterior are built to last the decade-long grind of a busy service; rounded internal corners mean cleaning takes minutes rather than hours.

Digital controls mean no fussing with dials: set your temperature, humidity, and program once, and the oven remembers up to 99 recipes. Automatic preheating gets you to service temperature fast, and the automatic or manual humidifier gives you steam when you need it—croissants that stay crisp on the outside, bread with genuine crust, vegetables that don't dry to parchment. The double-glazed door lets you monitor without letting heat escape, and internal illumination means you can see what's actually happening inside.

A. At full capacity with four GN trays, you're looking at 80–120 covers depending on what you're cooking (a tray of roast vegetables serves more than a tray of pastries). Most kitchens run multiple batches during service; the automatic preheating and fast recovery mean you're ready for the next load within 15–20 minutes for roasting.

A. Yes. The four programmable shelves mean you can roast on one, bake pastry on another, and slow-cook on a third if you want—though each batch will be at the same temperature. The oven holds temperature well and distributes heat evenly, so don't expect the precision of a racked oven for that work; this is about batch production at scale.

A. Both models have automatic or manual humidifier control. Steam improves crust on bread and pastry, stops roasted vegetables from drying out, and helps pastry rise evenly. If you're roasting, baking bread, or finishing plated dishes, steam is worth it. If you're mostly roasting or finishing proteins, you can live without it.

A. This model runs on three-phase 5.8kW. You'll need a dedicated three-phase supply (a sparky will confirm); single-phase alternatives are available if your site can't support three-phase. Installation takes a half-day; get a qualified installer in.
