THE WORKING VIEW

Why this convection oven earns its place

The INOXTREND TGDP404EH combines digital programming with steam injection and a clever auto-reverse fan system that ensures dead spots and hot spots don't plague your roasts. The fan reverses direction periodically, pushing air through different cavity pathways so heat reaches every corner of the oven evenly. It's the detail that separates professional roasting from hit-or-miss batch cooking.

Steam capability (distinct from humidification) injects moisture directly into the cooking chamber. This is different from hand-triggered manual humidification: you programme steam injection into your recipes via the digital controller, so every batch bakes or roasts identically. Bread gets steam for oven spring and crust crackle; pastries get precisely timed moisture for lamination lift; roasted proteins get an initial steam burst for surface sealing and tenderness inside.

Built from stainless steel inside and out, with four 460×360 mm shelves (delivered bare) and a double-glazed glass door with internal lighting, it's sized for serious batch work without excessive footprint—720 × 680 × 600 mm fits neatly into most kitchen layouts. Automatic preheating, a digital controller that stores up to 99 recipe programmes, rounded internal corners for easy cleaning, and sturdy stainless feet complete the picture. At 3.3 kW on single-phase supply, it's accessible to restaurants, hotels and catering kitchens where three-phase infrastructure isn't ready or necessary.

BEFORE YOU BUY

Questions, answered straight

Humidification (hand-triggered) adds moisture when you decide—useful for improvisation. Steam injection is programmed into recipes: you set it to inject at precise moments during the cook. For example, a bread programme might steam for the first 12 minutes, then cook dry for the remaining 25. That precision is why bakeries and high-volume producers prefer steam; restaurants that value flexibility prefer humidification.

Yes, in practice. Conventional ovens have hot spots where the fan sits and cool zones on the opposite side—cooks rotate trays to compensate. Auto-reverse pushes air through different paths, so hot spots and cool zones move during the cook, evening out the final result. You'll still occasionally rotate for visual evenness (one side browns faster), but it's not the critical labour step it is in standard ovens.

Absolutely. Load your trays, select the recipe from the menu (say "Sourdough Batard" or "Chicken Batch 4-pans"), press start. The oven handles preheating, steam timing, temperature adjustments, and alerts you when done. It's the consistency that experienced bakers and high-volume kitchens buy this for.

That's up to you and your recipe. For roasted chicken, you might programme 2–3 minutes of steam at the start to seal the skin, then dry heat. For vegetables, you might skip steam or add it halfway through for tenderness. For bread, steam for the first 10–15 minutes. The digital controller gives you that fine control—you're not a prisoner of the oven's fixed settings.

Tap water is fine—most commercial kitchens use it. On hard-water sites (high mineral content), mineral buildup can eventually block the nozzle. Weekly drain the steam boiler; monthly run a descale cycle using citric acid or commercial descaling liquid to prevent blockages. Our service team on 01792 732702 can show you how on the first visit or arrange an annual preventative descale.

Simple—don't programme steam into your recipe. The oven works perfectly as a standard convection oven. Many kitchens use the same oven for roasting (no steam) and bread (steam), just switching recipes. You own the full capability; you're not forced to use every feature.
