Humidification is automatic or manual—set it once, and the oven maintains the humidity balance your bread, croissants and pastries need. The analogue controller is straightforward: temperature dial, humidity control, and an LED ready-light. No screens to fail, no software updates; just mechanical reliability that your team will understand instantly.

The cavity is compact—620 × 580 × 570 mm—which means fast heat recovery between batches. Four 460 × 360 mm shelves fit inside (you supply these), and rounded internal corners are designed for easy cleaning: no edges where dough scraps or flour gets trapped. Stainless steel inside and out, with sturdy feet. Automatic preheating gets you to temperature without fussing. A double-glazed glass door so you can check progress without opening and losing your heat and humidity.

Single-phase 3.2 kW means this runs on standard commercial wiring without special installation. It's efficient: adequate power for volume baking without the energy footprint of larger ovens. Built to handle shift after shift in a working kitchen—solid, predictable, and built to last.

Questions, answered straight

Yes. The compact 620 × 580 × 570 mm cavity heats efficiently with convection circulation, so you get good preheat times and heat recovery between batches. Most commercial bakeries bake in shifts rather than loading a huge oven once—this handles daily bread, pastry and roasting volumes with no fuss. If you're planning 8-10 batches a day, this is your oven.

Automatic or manual—you choose. In automatic, the oven senses moisture loss and adjusts. In manual, you control it directly. For bread and laminated pastry, humidity is essential: it keeps the dough supple during rise and bake, giving you better crumb structure and crust development. For roasting vegetables or meat, you'd leave it off or minimal. The control is direct—no menu-diving.

Convection ovens preheat faster than deck ovens because of the internal fan circulation. From cold, expect 15–20 minutes to thermal stability. Once warm, heat recovery between batches is quick—10–15 minutes to reach temperature again, depending on how much you've loaded.

Four 460 × 360 mm shelves fit inside. You supply these, so you can choose materials (mild steel for bread, perforated for pastry, solid for roasting) and stack them however your workflow needs. Not all four need to be loaded.

Stainless steel cleans easily—damp cloth and mild degreaser at the end of shift. The rounded internal corners prevent flour and dough residue from accumulating in corners.
