THE WORKING VIEW

Why this convection oven earns its place

The TGDP005EH is the heavyweight convection oven for kitchens that measure output in covers per service, not dishes per hour. At 770 × 720 × 740 mm, it's substantially larger than compact models yet still manoeuvrable on a standard equipment stand. It holds either five 460×360 mm shelves or five full 1/1 GN trays—the industry standard for batch roasting in high-volume kitchens. That means a hotel can roast whole trays of chicken, fish, and vegetables for a 200-cover seated dinner without cooking in rotation.

The three-phase 5.8 kW supply ensures the oven has power to preheat quickly and sustain temperature under load—critical when you're running back-to-back seatings or feeding hundreds in a school or care kitchen. The digital controller stores up to 99 recipe programmes: bread batches with steam, roasted proteins with humidification, pastries with timed moisture injection. Once programmed, consistency becomes automatic—the same oven settings produce identical results across every shift, every week, every season.

Stainless steel inside and out, a double-glazed glass door with internal illumination, automatic preheating, rounded internal corners for HACCP-friendly cleaning, and sturdy feet complete the specification. The steam and humidification systems both work independently: programme steam for precise moisture injection during bread or pastry bake, use the humidifier for improvised roasting, or run without either for dry convection. This flexibility, married to genuine three-phase power and large capacity, makes it the default choice for hotels preparing plated service for hundreds and schools cooking in volume.

Questions, answered straight

1/1 GN (Gastronorm) trays are 530×325 mm—industry standard for batch cooking. One 1/1 tray fits per shelf; it's wider but shallower than the standard 460×360 mm pan. Most professional kitchens standardise on one or the other: big volume shops use 1/1 GN trays for compatibility with prep tables and storage. The TGDP005EH lets you run both if you want flexibility.

Yes. Load five trays, programme your roast recipe (say, 180°C for 25 minutes with humidification), press start. The three-phase power ensures the oven sustains temperature under that load; digital control manages timing. You get five trays of finished chicken out. That's 100+ portions in one batch—exactly what a hotel or large catering venue needs for a service.

Roughly 10–12 minutes to target temperature, depending on ambient kitchen temperature and how warm the oven already is. Most experienced kitchens preheat whilst plating starts or whilst front-of-house seats the first covers. By service pace time, it's ready. For bread, you'd preheat earlier to build up oven mass for crust development.

At 5.8 kW, three-phase, it's substantial but not unusual in commercial kitchens. Most hotels and schools already run three-phase; a quick check with your facilities team will confirm whether capacity is available. If it's not, an upgrade is typically a few hundred pounds and a day's work. Ring our team on 01792 732702 with your electrical details and they'll advise.

Exactly. programme Recipe 1 as "Sourdough Batard: steam first 12 min, then dry heat"; Recipe 2 as "Roast Chicken: humidification for first 10 min"; Recipe 3 as "Laminated Pastry: no steam". Load your trays, select the recipe, press start. The oven does the rest. That's the power of 99-programme memory: you're not fighting the machine, you're steering it.

Weekly: drain water tanks for both systems, refill with fresh water. Monthly: run a descale cycle (citric acid or commercial descaler) on both systems if you're on hard water—mineral buildup clogs nozzles. Annually: our service team on 01792 732702 can visit for preventative maintenance on the motor, seals, and valves. Most breakdowns are preventable with basic weekly discipline.
