Why this convection oven earns its place
The Turbofan E28M4 steps up from the single-cavity models to give you real multiples. It holds four 460×660 mm trays—that's the standard European hotel pan—which means you can roast four batches of vegetables, run four trays of pastries through at once, or load it mixed: some savoury, some sweet, as long as your oven settings allow. The 810 mm width and 762 mm depth mean it's still a benchtop unit, but substantially built; it's the oven you put in a space where you're cooking properly, not just finishing plates.
Convection heat to 260°C, plus that temperature precision down to 50°C, means you're covered for anything from slow roasting (holding vegetables at 60–70°C for service) to crust-building bakes. The fan-forced air means even heat across all four trays without hot spots, which matters when you're running service. Single-phase 230–240V at 5800W—it pulls more power than the E931M, but still standard industrial supply. Plug it in, dial in your temperature, and you've got consistent performance shift after shift.
The physical footprint is honest about what it is: a proper secondary or main oven for a working kitchen. It sits on a bench where you have the space, and it earns that space through reliability and capacity. Blue Seal's warranty—2 years parts and labour, 1-year extension available—backs that up.
