Why this dual fuel oven earns its place

The Blue Seal Evolution dual-fuel range is built around how working kitchens actually operate. Four natural gas burners handle the range-top work: stockpots, sauces, veg prep, plate warmth, all running at serious heat. Below, an electric convection oven delivers air-driven cooking that cycles heat evenly around every pan. No hot spots, no cold corners; roasts brown uniformly, bakes come out level, and holding capacity means you can load multiple service pans without drying food out.

The geometry is deliberate: instead of floor space eaten up by two separate pieces of kit, you get dual cooking modes within 750 mm. Convection air circulation lets you stack pans higher than static ovens permit and cook faster, because the heat reaches all surfaces simultaneously. Mains natural gas feeds the burners on demand, and 230–240 V electric powers the oven (28 kW under load). The 812 mm depth gives you genuine work surface behind the rings, and the streamlined sides lock cleanly with other Evolution units when you're building a production line.

Two years' warranty covers both gas and electric sides, parts and labour. Built for high-volume kitchens where efficiency and reliability matter every day.

Full gastronorm pans (1/1 GN size). The cavity is cavity-standard, and convection fans let you stack higher than a static oven, but load it full and dial the temperature down slightly to give air time to circulate through each pan.

Yes — the gas burners are independent circuits and the oven is separate electric. Burners at full power, oven holding bake temperature, no conflict. Standard for service cooking.

230–240 V, single phase. The oven draws 28 kW when actively heating. Your site electrician should confirm incoming supply and whether you need a dedicated circuit for this load. Standard commercial kitchen sizing in most UK premises, but check the spec with your electrician before ordering.

Yes, this model is natural gas mains-connected. We stock an LPG version separately (GK288-P) for bottle-gas sites — don't cross them. Different fuel = different jets, pressure, regulator settings. Stick with what your site has.

Convection fans move heat all around the cavity at once, so roasts brown faster and more evenly, bakes come out level, and you can fit more pans without cold spots. Reduce temperature by 10–15 °C from your static oven recipes and time your first batch to recalibrate. Pastry, bread, and roasts adapt immediately.

Daily: wipe range top after service, clear gas burner heads of spills. Quarterly: warm soapy water wipe inside the oven cavity.
