Why this combination oven earns its place
The Rational iCombi Classic FN891 is a stainless steel electric combi oven built for high-output food service. It takes 20 full-size 1/1 GN pans, gives you a broad cooking range from +30 to +300 °C and runs on a 400V three phase supply, so it is aimed at kitchens that plan properly for a serious fixed install.
Rational says the iDensityControl system adapts cooking by monitoring humidity, changing fan speed and using sensor-led airflow management in the cabinet. In practice, that is about more even results and less guesswork across mixed loads. The manufacturer also states that it can cook up to 10% faster than previous combi-steamers while reducing energy consumption by up to 50%, which is the sort of claim that matters in a busy service kitchen.
The iCookingSuite adds another layer of repeatability, using sensors and intelligent programming to adjust to preset parameters so you can aim for the same result again and again. For kitchens juggling multiple dishes, iProductionManager helps organise what goes on each rack, while the oven's four automatic cleaning programmes make day-to-day cleaning easier to manage.
