Why this blast chiller earns its place
The Williams WBCF20-SS gives kitchens 20kg of blast chilling or blast freezing capacity in a single reach-in cabinet — and crucially, it accepts the full 20kg product weight in either mode, with no reduction in capacity when switching from chilling to freezing. That matters for kitchens that use both functions regularly rather than picking one and living with the other's limitations.
Chill cycles take food from +90°C to +3°C in 90 minutes or less; freeze cycles run from +90°C to -18°C in 240 minutes or less. The AirSmart advanced airflow design keeps both processes even throughout the cabinet, avoiding the dehydration that comes with uneven cooling, while rapid freezing prevents cell damage that would otherwise compromise texture, appearance, taste and aroma.
The cabinet draws 1.1kW at 240V on R290 refrigerant, weighing 116kg gross, with six shelves and foodsafe stainless steel construction throughout. It's backed by a 2-year parts and labour warranty, giving cover on both parts and the work to keep it running.
