Why this prep counter earns its place
The DA680 from Polar's G-Series is a countertop preparation fridge built for the garnish and topping end of a kitchen. Six 1/4 gastronorm wells sit under a stainless steel lid, each holding up to 100mm depth of cold prep (sauces, garnishes, fillings), keeping them chilled and visible yet covered within arm's reach of plating.
Running at +2 to +8°C with static cooling, it keeps prep fresh through service without tying up upright space. The lid keeps stock covered and protected between orders, which helps with hygiene and stops prep drying out, and it lifts clear when the line gets busy. At just 32kg and 1400mm long but only 335mm deep, it fits snugly on a narrow pass or prep bench without needing floor space.
It plugs into 230V (110W) like any counter appliance. It suits operators who want dedicated, visible cold prep at plating instead of walking back to an upright mid-shift or digging into a drawer unit.
