Why this prover earns its place
The Williams Crystal PC1T is the proving side of Williams' Crystal bakery line: a single-door upright cabinet built to bring yeasted dough on evenly before it reaches the oven. Instead of relying on a warm corner of the kitchen, it holds the cabinet between +38 and +40 °C, controlling the proving environment so dough can develop volume and quality in a repeatable way.
Capacity is the practical strength here. The PC1T gives you 717 litres across 17 shelves, with internal space of 1390 × 587 × 800 mm for organising production batches. Load the cabinet after mixing and shaping, let the prover do the controlled warm stage, then move the batch to the oven when the dough is ready rather than when the kitchen happens to be warm enough.
The cabinet is built in stainless steel with a silver finish, so it suits a working bakery rather than a decorative front-of-house position. It stands 2140 mm high with a 737 mm width and 941 mm depth, and the 155 kg gross weight makes access planning worth doing properly before delivery.
