Because it pairs refrigerated and heated display, the SB40M holds full-size gastronorm pans in four 150mm-deep slots, enough for a mixed lunch spread. The chilled section and warm section each maintain their temperature independently across the same run, which is what a mixed buffet needs through a lunch service. The design keeps cold food cold and hot food hot throughout service, so you can run a full buffet without multi-location service points.
