Planetary Mixers

Planetary mixers are the all-purpose commercial mixer, using a rotating beater that also orbits the bowl to combine cake batters, creams, mash and lighter doughs evenly, standard equipment in bakeries, hotel pastry sections, cafes and care home kitchens.

Key specifications

Bowl size against batch volume is the sizing question: countertop models typically run 5-20 litre bowls on single-phase power, while floor-standing models scale to 40-60 litres and often need three-phase supply. Standard fit-out includes 3-10 speed settings, whisk/beater/dough hook attachments, and a 304 stainless steel bowl with a tilting head for easy access.

Planetary Mixers — FAQs

What size planetary mixer suits a small bakery?

A 20-litre bowl planetary mixer with a 0.75-1.1kW motor covers most small bakery and café pastry work; larger daily bread or cake production is better served by a 30-40 litre floor-standing model.

Can a planetary mixer handle bread dough as well as cake batter?

Yes for lighter and medium doughs using the dough hook attachment, but very stiff, high-hydration bread dough in large batches is handled more efficiently and with less motor strain by a dedicated spiral mixer.

How many speed settings does a commercial planetary mixer need?

Most commercial kitchens are well served by 3-10 variable speeds, giving enough range from slow folding to fast whisking without needing to change equipment for different recipes.

KitchenAid and Buffalo front the range, with Metcalfe and Hobart also well represented.
