Why Fresh Fish Deserves Its Own Commercial Fridge

Williams has launched a dedicated Jade fish cabinet. We explain the temperature, drainage and materials that separate fish storage from an ordinary fridge.

The buyer’s view

Fresh fish can tell you very quickly when its storage has not been thought through. Residual liquid gathers in the tray. Odours become harder to control. Delicate flesh loses quality. The inside of a general-purpose cabinet takes punishment it was never designed to handle.

Williams Refrigeration’s new Jade J1 Fish Cabinet addresses the problem as a complete storage system rather than simply lowering the thermostat on a standard fridge.

Built around the product, not the box

The cabinet operates between -2°C and +2°C. Williams has used food-safe, ammonia-resistant stainless steel inside and out, with removable racking, radiused internal corners and a base-mounted waste drain.

Eight 2/1 GN pans are supplied with slime trays. These lift the fish away from residual liquid instead of allowing it to sit in the bottom of a conventional container. Defrost water is evaporated using waste heat from the condenser, while the main drain supports cleaning and washdown routines.

Heavy-duty castors allow the unit to be moved for access, and the door is self-closing and lockable.

Why an ordinary catering fridge is not the same thing

A standard commercial refrigerator may be capable of reaching a suitable temperature, but fish storage is not only about the number shown on the controller.

The cabinet also needs to handle:

  • Moisture and drainage.
  • Frequent, thorough cleaning.
  • Liquids that should not pool around the product.
  • Materials suited to the storage environment.
  • Trays and racking that support hygienic handling.

Trying to recreate all of that with improvised trays inside a general-purpose cabinet can make cleaning slower and procedures less consistent.

Who is it for?

The obvious users are fishmongers and seafood restaurants, but the case is wider. Hotels with a substantial seafood menu, event caterers, production kitchens and businesses preparing fresh fish at scale may all benefit from dedicated storage.

The decision should be based on throughput. A pub serving one fish special a week probably does not need a specialist cabinet. A seafood-led kitchen receiving daily deliveries should at least examine the case.

Craven’s verdict

The Jade J1 Fish Cabinet solves an unglamorous but important problem properly. Temperature, drainage, tray design, cleanability and construction have been considered together.

That is the right way to judge specialist refrigeration. Do not ask only, “How cold does it get?” Ask what happens to the product, the liquid and the person cleaning the cabinet at the end of a long shift.

Craven Cooling can help assess delivery volume, tray requirements, available drainage and the cabinet’s route into position before an order is placed.

The stunt — The White-Glove Audit: At the end of service, run a clean white disposable cloth around the tray supports, door gasket and lowest internal corners of the current fish fridge. The result is not a laboratory test, but it reveals exactly where the daily cleaning routine is fighting the cabinet design.
