Why this utensil washer earns its place
The Winterhalter UF-M DE672 is a frontloading utensil washer for the pan and container loads that outgrow a standard undercounter dishwasher. Winterhalter describes it as having a 640mm entry height for large utensils including full-size gastronorm containers, so it is aimed squarely at prep-heavy kitchens where deep pans and service containers need a proper wash route.
The headline performance figure is 40 racks per hour, with the supplier specification giving a 60°C to 85°C temperature range. That combination of entry height and hourly output is the practical case for the UF-M: it keeps gastronorm containers, trays and large utensils moving without pushing them through a machine designed primarily for plates.
The machine measures 1720 x 775 x 870mm and has a 190kg gross weight, so it needs to be planned as a fixed pot-wash machine rather than a small plug-in appliance. It is a silver, three phase 415V unit with a drain pump.
