Why this utensil washer earns its place
The Winterhalter UF-M Energy DE673 is the energy-recovery version of Winterhalter's frontloading UF-M utensil washer, built for the large pans, containers and prep kit that standard dishwashers cannot comfortably take. The supplier description confirms a 640mm entry height for large utensils including full-size gastronorm containers, so it belongs in a serious pot-wash area rather than as a light-duty back-up machine.
Throughput is stated at 40 racks per hour, with the operating temperature range listed from 60°C to 85°C. That gives a buyer the important shape of the machine: a high-output utensil washer for repeat pan and gastronorm loads, not a domestic-style dishwasher dressed up for trade use.
The Energy specification adds integrated steam heat recovery and exhaust steam extraction, intended to reduce running costs and keep the surrounding work area cooler. A drain pump is included, the machine is three phase on 415V, and the silver cabinet measures 2000 x 775 x 870mm with a 211kg gross weight.
