THE WORKING VIEW

Why this extraction canopie earns its place

The labyrinth filter works differently than mesh or baffle designs: as air and grease vapour flow through the channel, gravity and momentum cause heavy grease droplets to separate out and run downward while air continues on. It's effective, requires no electrical assistance, and costs very little to run—the passive design means no moving parts to wear out.

Built in AISI 304 stainless steel, this 400 × 500 mm filter handles the corrosive environment of a commercial kitchen. At just 2 kg, it's light to install and remove, yet the solid stainless construction resists warping and dents from daily handling. The compact 25 mm depth means it doesn't eat up space in tight canopy installations.

This type of filter works well for kitchens where grease capture happens gradually—cafés, prep rooms, smaller takeaways. It complements mesh or cartridge filters in staged systems, or works alone for operations without constant deep-fry loads. Cleaning is straightforward: spray warm degreaser through it, rinse with hot water, and hang to dry. No cartridges to replace, no media to break down.

Questions, answered straight

A mesh filter catches grease in fabric layers. A labyrinth uses channels and gravity—grease falls out as air passes through. Labyrinths are gentler on airflow and need less frequent cleaning, but they work best for moderate grease loads, not heavy fryer operations.

Both are passive grease-separation designs. A labyrinth has internal channels that create a longer path for grease to separate; a baffle uses angled plates. The labyrinth typically handles slightly higher airflow before grease re-entrainment becomes an issue.

Yes, but less often than mesh. Grease runs down into your canopy tray instead of clogging the filter itself. Every 2–3 weeks, spray warm degreaser through it to clear any accumulated residue, then rinse with hot water. It dries quickly.

Yes. Many kitchens use a labyrinth as a first stage to catch heavy grease, then a mesh or cartridge filter as a secondary stage for finer capture. That extends cartridge life and keeps extraction efficient longer. Consult our team on 01792 732702 for your specific setup.

This is a Combisteel part at 400 × 500 mm. Check your canopy's filter bay dimensions—if it specifies this size or lists Combisteel labyrinth filters as compatible, it'll fit. If you're retrofitting, measure first.
