Why this convection oven earns its place
The Mono Eco is a modernised convection oven for serious professional kitchens. Built to replace the older Classic line, the Eco range adds a 7-inch high-definition colour touchscreen and a learning interface that stores up to 100 cooking programs. That's real power for any kitchen that rotates between batch roasts, pastry work, finishing dishes, or high-volume vegetable prep. The grid layout on the screen is intuitive—graphical symbols for Temperature, Time, Steam, and Damper settings, with values clearly shown below. You're not hunting through nested menus; you're reading a clear picture of what's happening inside.
The oven itself is robust: full-length toughened glass door so you see doneness without opening, right-hand hinges for easy access from the right side of your pass, stainless-steel build throughout. The cooking chamber holds 4–5 GN (2/1) trays depending on your arrangement—solid capacity for batch cooking vegetables, meats, pastry, or finishing large plates during service. A black two-stage door handle balances ergonomics with commercial durability. Inside, energy-saving LED lighting lets you see progress at a glance.
Where the Eco stands out is ease and efficiency. Steam and damper controls are built in, no separate injection cart needed. Sleep Mode drops the oven to standby temperature between services, cutting energy waste without losing heat recovery when you need to go again. Auto shutdown prevents the common nightmare of an oven left on overnight. Three-phase power and contemporary controls make this an oven that scales from a 40-cover restaurant kitchen to a school or care kitchen doing high-volume batch work. Stands are sold separately, but compatible stands (HW149 and HT451) integrate perfectly if you want to set it at a comfortable working height.
