The convection oven is the accelerator. Fan-assisted heat cycles batches through faster than static ovens and more evenly — crucial if you're running high volume where consistency matters. Multiple pans cook at the same pace, so 10–12 pastries on a tray all finish together, roasted vegetables colour uniformly and batch waste drops. You can run the burners cool during prep and bring all four online with the oven firing for full-bore service, or dial back to match quieter periods.
