The Convotherm Maxx Pro 20.10 EB with ConvoGrill combines two practical upgrades: ConvoGrill grease separation and a built-in electric boiler for steam. The grease system separates cooking oils from wastewater before it hits your drain, which stops blockages, cuts cleaning labour and lets you dispose of grease responsibly. The built-in boiler heats water to generate steam—a straightforward, conventional approach that's reliable and doesn't rely on injection components. For kitchens running high volume, that combination means drainage stays clear and steam generation stays simple.
The oven holds 20 × 1/1 GN pans with the disappearing-door space-saver design. Three cooking modes—roasting, baking, steaming—run on the same platform. Four function management systems let you roast, bake and steam in parallel, each on auto-sequence. The easyTouch 10" symbol-based display cuts training time and holds consistency across shifts; your team learns it visually, not through menus. Quick-select keys store your signature programmes, so once your mise-en-place is dialled in, loading becomes routine. The built-in boiler generates steam on demand—it takes a moment longer than injection systems, but it's simpler to maintain, with fewer moving parts and no nozzles to clear.
ConvoClean automatic cleaning handles the chamber between services. You run the cleaning programme and the oven cycles moisture and heat to shift burnt-on residue and grease residual from smoking. Three-phase 400V power (38,900W) feeds it; standard in every commercial kitchen. Build is stainless steel.
