You can hold production at 250–350°C for grilling, or scale down to 150°C for slower techniques — giving you the flexibility to char steaks, cook whole fish, roast vegetables, and work with game, all on the same service.
Fire-up takes 30–40 minutes, running at about 12–16 kg of charcoal per day with normal service (9 hours). At full pace, you'll hit 90 kg of output per hour. The oven is designed to handle a normal 160–180 covers, so it scales cleanly from small à la carte services to busy banquet work.
