Induction works with ferromagnetic cookware: most commercial stainless steel, cast iron, and carbon steel work fine. Copper and aluminium don't. Do a magnet test on your brigade's key pans. Nothing. The zone won't energise if it detects a non-compatible pan. The pan won't heat. It's actually a safety feature—stops you accidentally wasting 20 minutes wondering why your work isn't cooking.

Induction heats faster than gas and with tighter control. For searing and high-heat work, it absolutely delivers. Some chefs feel gas gives a more "alive" cooking experience (visible flame, instinctive response); induction purists argue the instant feedback is superior. Both work at professional level—it's preference.

The induction surface itself is nearly bulletproof—no moving parts, no burners to descale. Daily: wipe the stainless steel top.
