THE WORKING VIEW

Why this bratt pan earns its place

The Blue Seal Evolution bratt pan is batch-cooking capacity in one piece. 120 litres is serious volume — when you're building stocks or running sauce production, you're not constantly re-batching. The 1200mm width ensures heat distributes evenly across the entire pan, so braising 80kg of meat, or building a béchamel that's going to feed multiple services, happens consistently without hot spots and cold corners. The 17,000W three-phase supply delivers controlled, predictable heat that recovers fast.

This model uses manual tilt — when the batch is done, you grasp the tilt handle and manually angle the pan to pour the contents into your collection vessel. It's a straightforward mechanical operation; no motor, no complexity. For kitchens where batch speed isn't frantic and where manual operation is a tolerable part of the workflow, this model does the job and costs less to buy and maintain. You're pouring one or two batches a day, not thirty.

Three-phase electric is your power source — your kitchen needs to have three-phase wired to this location, but once it's there, you've got solid, controllable energy. The stainless-steel pan and frame are built for years of service, and the Evolution series design means it sits neatly in your prep kitchen or alongside your main line. Two years' parts and labour warranty, with the option to extend another year. Service line is 01792 732702.

BEFORE YOU BUY

Questions, answered straight

Both hold 120 litres and deliver the same even heating across 1200mm. The difference is how you tilt: this model has a manual handle you push to angle the pan and pour. The electric model has a motor that tilts it for you. If your kitchen runs a few batches a day and the operator can comfortably manage a manual pour, this model is simpler and costs less. If you're running production all day or want zero manual strain, the electric tilt is your answer.

About 220 kg when full (120 litres of stock/sauce plus the stainless pan). The tilt mechanism is engineered to make this manageable — the pivot point is designed so the load doesn't bear down on the operator's back. It's not lifting deadweight; it's controlled tilting. However, kitchens with occupational-health concerns should consider the electric model.

Three-phase 400/415V. Your kitchen needs three-phase at the location. If it's not available, work with a commercial electrician. Most catering kitchens have it, but confirm before ordering.

Even across the full 1200mm — that's the design. When you're braising a whole batch or building a stock, the consistent temperature means no overcooking at the edges and undercooked centre. The 17,000W supply and pan geometry work together.

Three-phase supply gives you smooth, controllable heat. From cold to a boil takes around 20 minutes depending on load, and once hot, you can hold any temperature you need — a gentle simmer to a rolling boil.

Wipe the stainless pan clean with hot water and a cloth after each use. Non-abrasive cleaner works well on the steel. The manual tilt mechanism is simple and maintenance-free — just keep it free of debris and corrosion. No motor or hydraulics to service; if anything needs repair, call 01792 732702.
