Why this bains marie earns its place
CW636 is a drop-in dry heat bain marie built to display, illuminate, heat and protect pre-cooked food in a live service setting. It is designed for a pre-formed countertop cut-out and measures 540 x 1875 x 660 mm, with a 71 kg gross weight and a silver finish.
The display uses a 5/1 GN heated tank area with individual 1/1 GN support collars, and those collars accept GN containers up to 150 mm deep. CED says product illumination and surface heat come from infra red quartz heat lamps housed in the elliptical profile gantry, while base heat and surface heat can be adjusted and locked from the operator side.
The superstructure is made from bright polished steel and aluminium rectangular profiles, and the customer side is protected by flat, toughened glass. CW636 also includes removable heater element covers for easier cleaning, a lifting kit for installation and a concealed control box with 2 m flexible electrical conduit, and it is factory set to hold food core at 85°C.
