Why this upright earns its place
The True T-19 is an upright storage refrigerator with a single door and 350 litres inside. It does the job every kitchen has to solve somewhere: holding the day's prepped mise, dairy and the back-up of everything on the line at a safe temperature, off the counters where space is always short. This is the reserve cabinet, not the service fridge — stock goes in by the tray and comes out to restock the line.
An upright earns its keep by making stock visible. Everything sits in one column at working height, so a chef can see what is running low without kneeling or unstacking crates, and one door means one pull to get in and one swing to close it — which matters more than it sounds on a section that opens the fridge a hundred times a service. True builds the T-Series to hold consistent, accurate food storage temperatures in demanding kitchens, and that is the real dividing line between a commercial cabinet and a domestic one: it is expected to pull back down quickly after a hot section has stood with the door open, and to hold that line all day rather than drifting between deliveries.
Construction is stainless steel and aluminium in a silver finish. Stainless is the default on the outside of a commercial cabinet because it takes daily sanitiser, wipe-downs and knocks from trolleys without marking for good, and it wipes back to clean in front of an EHO. Aluminium keeps weight down and stands up to the constant damp inside a working fridge. Site it clear of direct heat from ranges and fryers, keep the airflow around the condenser unobstructed, and 350 litres of chilled storage looks after itself.
