It keeps frozen dough, pastry blocks, par-baked lines and finished frozen stock together in one reach-in cabinet at 2.01 m tall, close to the bench, so the freezer end of your prep sits where the work happens rather than across the kitchen.
As an upright storage freezer it is made to hold product that is already frozen, not to rapidly freeze warm stock. The reach-in format with an interior light keeps stock visible so it gets rotated and used in order, and concentrates your frozen storage into a single 0.74 m wide, 0.99 m deep footprint. The cabinet holds -18 to -22 °C across the shift, and automated defrost keeps icing manageable on a daily load.
