Why this food container earns its place
GN1/1 is the full-size unit of the gastronorm standard at 325 × 530 mm, so this pan drops into a standard run without anyone measuring anything. The perforated base is what changes how it cooks. Steam reaches the load from underneath as well as around it, so a full pan of vegetables cooks through at something like the same rate top to bottom, instead of the lower layer stewing in the condensate that the upper layer sheds.
The same holes do a second job once the pan comes out of the cabinet. Liquid keeps draining away rather than pooling, which is what stops a batch of vegetables going slack on a buffet line while it waits to be served, and what keeps anything washed or rinsed in the pan from sitting in its own water. Rational describe it as versatile, robust and durable, and stainless steel is what makes that true in practice — it goes through a daily wash, takes a knock on a rack edge without holding the dent, and does not stain or carry flavour between a batch of greens and whatever the pan is used for next.
