Every blade is built on Wüsthof's engineering. Forged from German stainless steel and hardened to 58 Rockwell through a 54-step manufacturing process that combines laser precision with hand finishing, these knives deliver a professional edge. The hardness means the blade holds its sharpness through heavy use and responds well to regular honing. The edge angle—14.5° per side—is ground and finished to let the knife do the work.
Each knife features the full bolster, the metal guard at the blade's base that protects your hand and balances the knife's weight. It's a signature of proper professional knife engineering: the weight settles naturally in your hand, reducing fatigue during long service runs. The POM handles resist bacterial growth, discolouration and years of daily washing and use.
