The trade-off is that acute edges demand proper technique — no hacking or scraping — and hand washing, not dishwasher.

Ice-hardening is a process that increases the blade's hardness, making it hold an edge longer and sharpen more easily. It's particularly valuable on a Santoku, where the wider blade and flat cutting motion generate different stresses than a traditional chef's knife.

For professional kitchens with proper knife practices, hand washing takes 15 seconds. For home cooks, it's a small price for blades that stay genuinely sharp. The dishwasher will dull them quickly and risks edge damage, so hand washing is the price of keeping these performing at their best.

Global blades excel at the push-cut motion (straight down, slightly forward), which works beautifully with the acute edge angle. Rocking motions (rock back and forth) or scraping dulls the edge faster. Proper cutting board (not glass or marble) and proper technique keep the blades performing for years.
