THE WORKING VIEW

Why this chefs knive earns its place

At 16cm, this is the paring knife: the blade for close work and detail. Smaller than a chef's knife, it's designed for the tasks that need precision — peeling, deveining, tourneeing, fine brunoise, garnish work. It's built on the same principle as every Wüsthof Classic: forged from one solid piece of high-carbon stainless steel and refined through 38 manufacturing steps that produce a blade that holds its edge and a handle that won't give up.

The forged construction — continuous steel from blade to tang — gives this small knife the weight distribution and durability that make it reliable across years. At around 170g, it's light and quick in your hand, yet substantial enough that you're not fighting the blade. The honed black finish is sharp out of the box and cuts cleanly through vegetables, fruit, and any detail work.

Many cooks have a paring knife in their kit because there are moments when reach doesn't matter — you need control. Peeling an apple, deveining a prawn, plating garnish: these are the tasks where the right-sized blade transforms the work. A good paring knife earns its place.

BEFORE YOU BUY

Questions, answered straight

Yes. The smaller blade is quicker and more comfortable for close work — peeling, deveining, precise cuts. A large chef's knife does more than you need for these tasks and is slower and clumsier. The right tool for the right job.

Vegetables, fruit, and soft prep where control and precision matter. It's excellent for detailed knife work and garnish. It's not a substitute for a chef's knife, but it does what a chef's knife can't do efficiently.

Forging creates a continuous blade and tang, which means better balance, durability, and edge retention. Cheaper paring knives are often stamped and assembled — they feel lighter and dull faster. Wüsthof knives take an edge and hold it for years.

Yes. Hand wash and dry immediately after use. The honed finish is durable and develops character over time. Regular honing with a steel keeps the edge keen; professional sharpening every 12 months keeps it razor-sharp.

Yes. Built on the same forging principle as larger Wüsthof knives, it's made to last decades. Treat it well — hand wash, proper storage, regular honing — and it'll outlast the people using it.
