THE WORKING VIEW

Why this cold server earns its place

This is a component, not a standalone item. It's part of the APS Frames buffet system—the structured, modular approach to presenting cold food at scale. The dark wood construction (125 mm deep, 530 mm wide, 325 mm tall) holds ice and a full Gastronorm 1/1 container, which means it accommodates a standard 530 × 325 mm steel pan at any depth. That size is the universal language of commercial catering: one 1/1 GN pan = one prep container = one service unit. No guessing, no custom fits.

Dark wood is intentional. On a buffet line with stainless steel, white porcelain, and bright lighting, dark wood grounds the display visually. It's warm without being decorative; it reads as quality craftsmanship. The wood structure sits at the right height for a buffet counter—tall enough for service line sight lines, shallow enough that guests can reach across easily.

You fill this with ice, nest your GN pan inside, and it keeps cold food cold during service—prawns, smoked fish, cold meats, terrines, whatever your cold course is. The thermal mass of ice does the work; the box is the frame that holds it all together and makes it look intentional. At 6 kg, it's moveable—you can refresh ice mid-service, relocate it between buffet sections, or store it back-of-house between events.

BEFORE YOU BUY

Questions, answered straight

Depends on room temperature and how much warm air you're trading (opening the lid, serving). In a standard banqueting room (roughly 18–20°C), a full ice load keeps GN food safely cold for 3–4 hours. Refresh ice halfway through a long service, or work in shorter rotations with fresh ice boxes.

Yes, technically. It's a Gastronorm 1/1 container—any standard GN pan fits. But visually, it's designed to work with Frames, so mixing systems will look less cohesive. The Frames range includes serving counters, display units, and temperature-controlled options—a full ecosystem.

Roughly 10–15 kg depending on how densely you pack it. That's enough to keep a full GN pan cold for a typical service. You'll refill or rotate boxes for events longer than 4 hours.

Yes. The wood is sealed and treated for food service use. Wipe it down between services with a damp cloth; if it gets wet, dry it to prevent water spotting. It's not submerged—just wipe and dry, like any food-service equipment.

The ice box comes alone—you provide the Gastronorm pan and the food. You likely have GN pans in-house already; if you need one, that's a separate order. The Frames modular approach means you build your own combinations.

Properly cared-for food-service wood is extremely durable. Dry it after use, don't leave it sitting with wet ice pooled in the bottom, and it will last for years. Minor surface marks develop with age—that's part of the character of wood in commercial use.
