Why this chopping board earns its place

Purple is the colour a UK kitchen gives to allergen work, and that is the entire job of this board. A free-from order does not fail because someone was careless with the ingredients; it fails because the gluten-free bun was cut on the board that had just had a floured coating on it. A dedicated purple board removes the judgement call — the chef plating an allergen order reaches for the colour, not for whatever board is clear. Prepara pitch these as long-lasting professional quality boards, and longevity matters here more than on a general board, because an allergen board that has been retired early tends to get quietly replaced by "the nearest clean one".

At 300 × 230 mm this is a station board rather than a full bench board. That size suits the way allergen prep actually happens: one cover, brought out when the ticket lands, worked on its own patch of bench and taken straight to the wash-up afterwards. It stores easily in a rack away from the main board set, which is half the point — a board this size can live at the allergen station instead of migrating into general service. The 12 mm thickness gives it enough weight to stay put under a knife without skating, while still lifting one-handed.

High density polyethylene is also kind to an edge. It gives under the blade and closes behind it, so a knife holds its edge far longer than it would on glass, stone or a hard composite. Treat it the same as any board on the line: scrubbed after use, washed properly at the end of service, stood on edge to dry rather than stacked wet. When the cut marks are deep enough to hold soil after washing, or the board has cupped enough to rock, it comes off the rota — on an allergen board that is a hygiene decision, not a cosmetic one.
