THE WORKING VIEW

Why this product earns its place

Green carries the highest stakes of any board on the rack, because nothing prepared on it gets cooked afterwards. Leaves, herbs, fruit and garnish leave the board and go out on the plate more or less as they are, so anything picked up on that surface goes to the customer with them. That is the whole argument for a dedicated ready-to-eat board rather than a wipe-down of whichever board is nearest: the separation has to be physical and visible, because there is no later stage in the process that will correct it.

At 450 × 300 mm there is room to turn out a crate of leaves or a bunch of herbs in one pass instead of in handfuls, and the 25 mm section keeps the board rigid and flat on the bench. That rigidity counts for more on green work than most people expect — fine knife work on herbs and soft fruit depends on the board not flexing or creeping, and on the edge staying keen enough to cut rather than bruise. Low-density polyethylene helps there too: it is the softer polyethylene grade, so it is gentler on an edge than a hard surface, at the cost of showing a score sooner. It is non-porous, so nothing soaks in. Wash it thoroughly, stand it on edge so both faces dry, and retire it once scoring is deep enough to hold residue through a wash — on a ready-to-eat board, make that call early rather than late.
