Why this mould earns its place
A canelé is more art than cake: a thin, crisp caramelised exterior wrapping a soft, spiced custard interior. The ridges aren't decoration — they create the surface area that caramelises. This individual DeBuyer mould in stainless steel is engineered for that chemistry. At 55 mm diameter and 55 mm tall, it yields a single, perfect canelé that sits plated or served as a petit four.
Stainless steel is the canelé baker's material. It conducts heat evenly to caramelise the batter's outside while the inside stays creamy. Unlike traditional copper (which requires constant seasoning), stainless steel is reliable and durable — every bake is consistent. The mould is dishwasher-safe, so minimal cleaning between batches, and it's freezer-safe if you prep and chill batter in advance.
One mould makes one canelé at a time, so run a tray with multiple moulds for volume. This is the tool for patisseries building a reputation on a signature canelé, or restaurants and hotels wanting one premium petit four that looks handcrafted and tastes properly spiced.
