Why this lid earns its place
A notched lid sits flush on any 1/1 Gastronorm pan, allowing you to stack loaded pans eight high without crushing what's underneath. The notch gives ladles and serving utensils room to reach in, so you can serve direct from the pan without lifting the lid fully off. Stainless steel resists discolouration and the dishwasher, and the flat lid face lets condensation drain rather than pooling on the food.
Use it to stack ready-portioned items for transport, to hold temperature during slow service, or to keep splashes off prepared ingredients between prep and service. The notch is small enough to retain warmth but wide enough that steam escapes gradually, preventing the sudden release of hot air when you remove the lid.
