Why this plate earns its place

The 255mm Flora is your main course plate. It's sized for real plating—enough rim for presentation, enough well for protein, veg, and sauce—without overshooting into the "this plate is bigger than my head" territory. The coupe (curved rim) guides the eye inward to the food and prevents sauce from pooling at the edge. At 677 grams per 12-pack (roughly 56 grams per plate), it has real substance—it feels good in hand, it sits stable on the table, and it projects "we know what we're doing" without being showy.

Alumina vitrified ceramic is the engineering choice that makes commercial sense. It's non-porous—won't absorb oils, water, or service stains. It's thermal-shock resistant, meaning you can plate hot, serve hot, and send it straight into a 65°C commercial dishwasher cycle without the crazing, cracking, or checking that kills cheaper ceramics. Patterned finishes hide the minor wear that accumulates in professional kitchens; the brown on Flora is sophisticated without being decorative—it works equally well under a premium presentation or a casual bowl.

Heat and chill retention matter at this size. A plate that stays hot keeps the mains at proper eating temperature longer; a plate that cools quickly dries faster in the wash, which is your bottleneck when you're cycling plates through a 150-cover service. These stack safely for the dry-store, and the weight is manageable—a full 12-pack at just over 6.7 kg moves easily during service changeover.

BEFORE YOU BUY

Questions, answered straight

Service hot—straight from the pass at 70–80°C. The vitrified ceramic handles it, and thermal shock resistance means the dishwasher (65°C) doesn't phase it.

Coupe rims are slightly pitched inward—they guide sauce away from the edge, prevent spillage when plating or carrying, and frame the food. Flat rims offer more rim space for presentation but require more care when plating liquids.

About 500 ml of liquid or semi-liquid, though practical plating is typically 250–350 ml sauce with solids taking the rest. The coupe design keeps things contained.

Yes, within reason. Vitrified ceramic is hard-wearing, but it's still ceramic—a heavy, hot cast-iron pot on an unpadded plate for an extended time could potentially cause issues. Don't leave hot pans sitting on service ware.

They're built for it. 65–75°C cycles, standard detergent, 2-minute wash times—these are the conditions vitrified ceramic thrives in. They'll come out clean and ready for the next service.

A full 12-pack (6.8 kg) stacks safely on a standard kitchen shelf without issue. The weight is distributed; the coupe design prevents them jamming. Rotate stock regularly so no single stack sits indefinitely.
